The minute the air starts getting crisp and the leaves fall, I get a craving for endless bowls of warm, hearty soup. Slow cooker recipes are SO easy to make and one of my favorite ways to prepare meals on busy nights. Don’t spend hours in the kitchen slaving over a hot stove. Simply dump all your ingredients in your slow cooker, enjoy your day, and come dinner time your house will smell amazing with this Crockpot Taco Soup.
Supplies You'll Need
Crockpot Taco Soup is super simple to make and is easy clean up! Here is what you’ll need:
Crockpot–I use a 6 quart and everything fits great but you could always use a larger Crockpot and adjust the recipe to your family’s needs
Crockpot liner–these can be a lifesaver for clean up if you have them on hand
Wooden Spoon–These ones with silicon ends are my favorite and so easy to clean!
Tips for Crockpot Taco Soup
- Change up the beans to fit your preference. I like to have variety in mine, but you can make it fit your preferences or whatever you have in your pantry
- Have some fun with lots of toppings: sour cream, shredded cheese, tortilla chips, avocado, green onion, and jalapeños are some of our favorites
- The longer you cook this the better! If you’re strapped for time, you can always switch the recipe up to high heat for 4 hours, but I prefer my soup to cook together as long as possible.
- Add or take away a little bit of spice depending on your preferences. I like to add fresh jalapeños to my soup for that extra kick, but if that’s not your cup of tea feel free to change it up as you wish.
Topping Ideas
Nothing says “make-your-own” soup like having an endless number of toppings. That way everyone can make it their own! Here are some of my favorite toppings to add, but feel free to be creative.
Sour cream
Shredded cheese
Jalapeños
Cilantro
Avocado
Sliced green onions
Corn Chips (These are a must in my house!)
Favorite hot sauces
I like to fill a bunch of bowls with all the fun toppings and let everyone enjoy a “build-your-own” soup bar. This is perfect for parties and large gatherings. The recipe can be scaled larger to feed more people. Just use a larger crockpot and double the recipe. Everyone will dig right in and will think you spent all day cooking this delicious, flavorful meal. Yum!
Crockpot Taco Soup
Equipment
- Slow Cooker
Ingredients
- 1 lb ground beef or turkey
- 1 can pinto beans
- 1 can kidney beans
- 1 can black beans
- 1 can whole kernel corn
- 1 cans diced tomatoes
- 1 can diced tomatoes or jalapeños
- 1 7 oz can diced green chiles
- 1 1/2 cup diced onion
- 1 diced jalapeño
- 1 packet taco seasoning
- 1 packet ranch dressing mix
Optional Toppings
- Shredded cheese
- Sour cream
- Corn chips
- Green onions
- Sliced avocado
Instructions
- Brown ground beef or turkey in a medium sauce pan with some of the diced onions. Drain and transfer to the slow cooker
- Rinse and drain all beans. Add to the slow cooker
- Finish adding remaining ingredients and stir well to combine
- Cover and cook on low for 6-8 hours
- Garnish with corn chips, sour cream, cheese, avocado, or any other desired toppings
